FHA2012 IMPERIAL CHALLENGE
- The International Team Chinese Banquet Culinary Competition
An event targeting the Chinese culinary world, FHA2012 Imperial Challenge is set to get the industry talking with participation from international chefs who share the same passion and ideal to be crowned the industry's best at this competition.
The theme of this edition's Imperial Challenge is in line with consumers' current focus on healthy lifestyle. The competition aims to steer away from the use of expensive ingredients and goes back to the basic essence of Chinese Banquet - highlighting the variety of taste, the range of culinary techniques and healthy eating.
The objective of the competition is to have chefs showcasing their culinary skills without focusing on creative yet inedible presentations. The order of the dishes must meet the standards of Chinese Banquet where the cold dishes are served before the warm, savoury dishes before the sweet, and delicate followed by strong flavours. The hot dishes, cold platter or the noodle item should also follow the standards of traditional Chinese Banquet.
Chefs who are passionate about Chinese culinary can take this opportunity to pit their skill against international chefs and network with industry colleagues in this challenge which takes place only once every four years.

《御厨》- FHA2012国际中餐筵席争霸赛
《御厨》- FHA2012国际中餐筵席争霸赛旨在弘扬中餐业界风采,希望能让来自各国各地,热爱中餐烹调的厨师在这难得四年一届的争霸赛中聚集一堂,各显厨艺。
本届比赛将以市场需求生活讲究健康为主题,避免以花巧或大鱼大肉的形式参与比赛,体现烹调要以人们生活吃的健康,并且讲究整体宴席口味多样分明,烹调技法多种。不以珍贵食材取胜,不以花巧美观而不能食用来取悦评判团取胜,充分体现作为一名厨师的表现与灵巧的工夫底子。出菜程序必须符合中华菜系中的宴席标准,先冷后热,先咸后甜,先上口味清淡的,后浓厚。不论热菜、冷拼或面点,都将能依照中华传统宴席标准的上菜方式为佳的表现。
身为本届《御厨》的首席评判,黄清标师傅谨鼓励热爱中餐烹调并希望跟世界各国的厨师切磋厨艺,交流心得的朋友前来参加这难得四年一度的争霸赛。
