Stephen Davidson

Stephen is an International Food Safety Consultant, High Risk Food Safety Auditor, Trainer and Managing Director of Food Safety Management Solutions. He has over 30 years of food safety risk management experience in both public and private sectors.
Stephen is a current Fellow and Director of Environmental Health Australia and its President from 2003 – 2004, a former Director of the International Federation of Environmental Health and a member of Restaurant & Catering NSW Board.
He has developed and coordinated food safety risk management programs for major events and was a Food Safety Management consultant at the Sydney Olympics and Paralympics. He also advises Federal and State Governments on food safety issues.

Mr. David Lennarz is Vice-President of Registrar Corp, a consulting firm specializing in U.S. regulatory compliance. He graduated from University of Virginia with a Bachelor of Arts degree. A Technical Expert for the U.S. FDA, David assisted the Division of Field Investigations in performing verification and investigative work relating to foreign food and drug establishments.
David published articles and lectured in trade shows about FDA regulations and foreign trade. He was invited to speak in trade shows in over 20 countries around the world, which are attended by government agencies, trade associations and other attendees in the light of his professionalism and extensive experience in this field of ever-changing regulatory issues.

Lim Lee San is the Food Legislation Branch Head of the Agri-Food & Veterinary Authority which ensures a resilient supply of safe food, safeguards the health of animals and plants, and facilitates agri-trade for the well-being of the nation. She is responsible for the reviewing and drafting amendments to the Sale of Food Act and the Food Regulations.
Lee San oversees evaluation and makes recommendations for approval for use of new ingredients and additives. She advises on all functions of the National Codex Contact Point; provides consultation on food legislation, food and drug classification, food labeling and advertisement; and educates food traders and consumers through publications.

Dr. Rodney Wee PhD. is the CEO of the Asia Cold Chain Centre (ACCC), which provides expertise in Cold Chain and Post-Harvest Operations. He has been managing businesses for more than thirty years in various companies and countries.
Rodney has spoken, chaired and facilitated seminars, conferences for APEC, the South Australian Freight Council, the Asian Productivity Organisation (APO) as well as leading conference organizers. He has presented papers as well as trained industry players and governmental parties in Cold Chain Management practices, Post-Harvest operations, Transport & Logistics.
Since 2008, he has also been involved with the Pharmaceutical and Biome & Bio-logistics industry in similar capacities.

Richard Khaw

Richard Khaw is the Projects Manager and Course Manager for the Food Science Program in Nanyang Polytechnic since 2004. Prior to that, he was in-charge of the Molecular Biotechnology Program from 2001 to 2004.
Richard was a Research Assistant with the Molecular Diagnostic centre in National University of Singapore Hospital and the Applied Chemistry and Clinical Trial Labs in John Hopkins Singapore before joining Nanyang Polytechnic.
He graduated from National University of Singapore with a Bachelor of Science (Honours) in Microbiology and subsequently obtained a Master of Science in Food Science & Technology from the University of New South Wales, Australia.

Ms. Chong Nyet Chin is the Food Safety & Quality Director of NTUC FairPrice, Singapore’s largest supermarket chain that also incorporates hypermarkets and convenience stores.
In her current position in FairPrice, Chong is responsible for the overall control of food safety management and quality assurance system. She has helped FairPrice in developing a risk management framework and various control measures hence fulfilling the vision of assuring food safety from source to store and building a strong brand name.
Chong has shared her experiences on quality assurance and food safety in various conferences in order up the standard of these areas within the industry.

Edward Jansson

Edward Jansson is the Director of Science and Technical Services at the NSW Food Authority, which is responsible for food regulation in the Australian state of New South Wales. He manages the Authority’s science and technical program which includes risk assessment and food survey studies, developing technical information for the industry and consumers and overseeing its food testing program. He provides scientific and technical advice within the Authority when responding to emerging issues and food incidents.
Edward has experience in the industry with his roles encompassing laboratory services and management, food safety management and auditing and technical and scientific advisory services. He holds a Master in Food Microbiology from the University of New South Wales and is an active member of the Australian Institute of Food Science and Technology.

Marc Kollényi is the Global Marketing Manager of Human Nutrition & Health for Dietary Supplements at DSM Nutritional Products since 2008. Next to this, he is the responsible Global Program Manager for Quality for Life, DSM’s mark of quality, reliability, traceability and sustainability.
Previous to DSM, Marc had different assignments as sales, brand and business development manager at Unilever Europe for and Intersnack Europe for 7 years and 2 years respectively.
Marc is a German citizen and based at the DSM Nutritional Products headquarter in Basel, Switzerland. He has a German university degree in Business Administration and Marketing.

He graduated with a Master of Science in Food Technology from University of Reading and is one of the SIFST approved Food Safety Consultant & Food Safety Specialist for sauce, UHT, canned food and other food processing.
With 15 years of food safety practices in the industry, he is now providing ISO 22000 as Food Safety Lead Trainer for SIFST & various food safety training programs for Singapore Polytechnic & other food institutes. He has also provided services to more than 200 over food companies ranging from international hotels & chain restaurants, public listed & MNC food manufacturing companies in Asia.

Peter Bracher is the Managing Director for NCF-CMi Asia Pacific, a leading safety assurance company. He is responsible for establishing food assurance operations throughout Asia for NSF-CMi, which is part of NSF International.
Peter’s early experience was as the Chief Environment Health Officer in UK before heading the food safety division in Tesco. He then moved on to ASDA Stores Ltd, part of the US retailer Wal-Mart as the Director responsible for food safety, PR, government affairs and environmental management. Before joing NSF, he was Head of Operations in Reliance Industries in India where he set up Reliance Retail and supported the opening of over 60 supermarkets in 2 years.

Anderson Tan is the Managing Director and one of the lead trainers of XpRienz Pte Ltd, an Approved Training and Assessment Centre accredited by the Singapore Workforce Development Agency. He was a scholar with the Statutory Board and graduated with a 1st Class Honours and a Masters from the National University of Singapore.
Anderson has active involvement in managing organizations of varying sizes and structures and has developed management systems to cater to organizations with differing needs. Yeow How Ming started his career after graduating from the Singapore Polytechnic with a Diploma in Mechanical Engineering. Attended numerous corresponding courses along the way and acquired a Master Degree in Technology Management from Griffith University, Australia.

Humico provides their clients with a Humidity and Bacteria Control System (HABCS), which increases the refrigerators efficiency to reduce bacteria (tested by SETSCO Services Pte Ltd). HABCS is a “Food Safe” fitting, regulated by the Australia and New Zealand Food Standards Code – Standard 3.2.3 Food Premises and Equipment.

John Sloane

John has worked for many years in the culinary field and has been part of the culinary scene in Singapore for the past 10 years. He has a string of culinary awards and has managed the Singaporean National Culinary from 2000 – 2004. Apart from being a WACS approved judge since 2000, he has also been elected as the World Association of Chef Societies Continental Director for Asia (WACS) in 2006.
He oversaw all aspects of kitchen operations for SATS Catering ICC1 for 9 years. In 2009, John took on a new role as Vice President Culinary Operations to be part of the opening team of Resorts World Sentosa. He is currently responsible for 550 Chefs in the RWS Team. He has implemented a strong Food Safety program and takes active part in coaching his colleagues in this area.

Yohei graduated from University of Tokyo. He studied Business Administration at Cornell University. He is in close contact with Cornell Food Science and Management as a Council Member. After working may years with the Ministry of Agriculture, he joined a trade association where he gained his experiences in food business operation and regulations. Since the outbreak of O -157, he has worked to promote the food safety system. He has published a book on globalised food safety and food defense.

He is dual certified with both the Disaster Recovery Institute and the Business Continuity Institute and is a member of the International Association of Emergency Managers.
