Review of FHA2016

Overview

Food&HotelAsia2016 (FHA2016) – Asia’s leading and most comprehensive international food and hospitality trade event was a huge success with many firsts and new records set.

With its first outdoor hall extension, FHA2016 occupied a whopping 97,000 sqm of exhibition area and welcomed close to 72,000 attendees from over 100 countries/regions, a 13.0% increase from the last edition in 2014. Trade attendees include exhibiting staff, trade visitors, conference speakers and delegates, judges and competitors, and members of the media.

Throughout the 4-day event, trade buyers packed the exhibition halls in search of products and solutions amidst the tens of thousands of product offerings put up by a record 3,189 exhibitors from 70 countries/regions and 60 international group pavilions.

Adding to the excitement onsite, a string of world-class competitions, seminars, workshops and activities were staged alongside the exhibition. Hundreds of competitors were vying to out-do each other with their skills and talents at FHA Culinary Challenge, FHA Barista Challenge 2016, first CTI Latte Art Duel @ FHA, the new Sweet High Tea Challenge, and Bocuse d’Or Asia Pacific (held alongside FHA for the first time). Conference delegates and speakers were highly engaged in gaining and sharing industry knowledge at the FHA International Conference. Other new highlights at the show included the Halal Supermarket @ FHA2016 and Recommended Self-Guided Trails.

FHA2016 played host to a record 47,630 trade buyers, a notable 8% increase from its last edition in 2014. Overseas visitors made up a significant 41.9%. Visitors hailed from 100 countries/regions, coming from all spectrums of the F&B and hospitality sectors across Asia and beyond, including hotels, foodservice, importing/distribution, retailing, bakery amongst others.

With many projects around the world, this is especially important to me as it goes to show how much weightage manufacturers are giving to FHA. One of FHA’s most exhilarating events, FHA Culinary Challenge saw 817 competitors, a mix of both young and established chefs from around the world, participating at its 2016 edition. Winners for the various challenges, namely Individual Challenge, Gourmet Team Challenge, and the first Sweet High Tea Challenge, were crowned over 4 days of intense cook-offs.

FHA Barista Challenge 2016

Hosted by the Speciality Coffee Association of Europe (SCAE) – Singapore Chapter, 8 top baristas, national champions from across the region, including Hong Kong, Indonesia, Japan, Malaysia, Sri Lanka, Taiwan, Thailand and Vietnam, congregated at SpecialityCoffee&Tea2016 to pit their skills against one another for the honour of being the best in Asia.

CTI Latte Art Duel @ FHA

64 baristas signed up for the first-ever CTI Latte Art Duel @ FHA that was jointly organised by UBM SES and coffee, tea & i. Each contestant was required to prepare a free pour latte within an intense three-minute performance and present it to the panel of three distinguished judges, including Jin Kyu Kim – the current Latte Art Champion from Korea, Qi Li – the current Latte Art Champion from China, and Van Lin – from Gabee in Taiwan.

After defeating his opponents in this bracketed single-elimination tournament, Wong Stephen Cullamat (Park Hotel Alexandra, Singapore) emerged as the champion.

Asian Pastry Cup 2016

Asian Pastry Cup, which celebrates its 10-year anniversary this year, attracted 11 teams from China, India, Indonesia, Malaysia, the Philippines, Singapore, Sri Lanka, Thailand, Vietnam, Japan and Syria to compete in its 2016 edition.

In two days of grueling and adrenaline-pumping competition, participating teams worked tirelessly for eight hours to present a chocolate showpiece, a sugar showpiece, 16 plated desserts and two chocolate cakes. Through their creative plated dessert comprising Strawberry Compote with Lychee Granite Vanilla Mascarpone Cream, Lychee Sorbet Citrus Pain de Gens, the Singapore team was crowned the champion.

In addition to the 11 jury members from each participating nation, this year’s panel also included Gabriel Paillasson (World Pastry Cup founder), as well as world-famous pastry chef Pierre Hermé who acted as the International President of the Jury.

Each team was judged on the taste of their products and their technical ability.

For the first time, the competition was streamed live on YouTube and Youku (in China), allowing pastry fans from around the world to follow and catch key moments of the competition.

Bocuse d’Or Asia-Pacific, which celebrates its 4th edition this year, was held at FHA for the first time. The competition brought together the elite of Asia-Pacific gastronomy whereby the 9 national teams from Australia, China, India, Indonesia, Japan, South Korea, Singapore, Sri Lanka, and New Zealand competed in a public-facing open kitchen.

Bruno Ménard, President of the new Bocuse d’Or Academy Singapore, together with Otto Weibel who is the Honorary President, presided the contest.

The top 5 qualified candidates are given the chance to compete for the Grand Finale of the Bocuse d’Or that will be held in Lyon (France) in January 2017.

This year, Japan takes the stage again, as chef Kataro Hasegawa, supported by his commis, expressed his talent to the jury with a fillet of Angus beef in pastry, Rossini-style and Toothfish marinated in Asian flavours.

FHA2016 International Conference was a resounding success! FHA International Conference continues to be the region’s leading knowledge exchange and networking platform for the food and hospitality sectors. This year, FHA International Conference played host to close to 400 attendees from hotels & resorts, food services, food manufacturers and technology & solution providers.

The 3-day action packed conference, which ran from 12 – 14 April, featured close to 90 industry experts, and discussed the latest trends, topical challenges and best practices. Attendees had an amazing learning and networking experience through masterclasses, site visits, networking sessions, power-packed panel discussions, useful user case study presentations and interactive roundtable discussions.
